750ml. Zymo Wines, named for the study of fermentation (zymology), is a brand focused on celebrating the science and artistry of winemaking. Lightly pressed, racked to high turbidity, and wild fermented in neutral barrels. Aged on lees in barrel for 9 months, occasionally stirred. Unfined. Textural, voluptuous, exotic and seductive. Zymo wines are intended to be joyful and expressive of the intricate details of their creation. A passion project of seriously good wine, made whole bunch and hand-picked fruit from Ulverstone, Tasmania.
