Zymo Chardonnay 2024

750ml. Zymo Wines, named for the study of fermentation (zymology), is a brand focused on celebrating the science and artistry of winemaking. This Chardonnay is gently pressed to neutral barrels with full solids and pressings included. Aged on lees and stirred occasionally. Racked to 30% new oak later in the year. No fining. Citrus, cream, textured and balanced. Zymo wines are intended to be joyful and expressive of the intricate details of their creation. A passion project of seriously good wine, made whole bunch and hand-picked fruit from Ulverstone, Tasmania.
